Pinot Noir has an amazing capacity to communicate a sense of place. More than any other grape variety, Pinot Noir bears the stamp of its vineyard of origin in its flavors, textures, aromas and its ability to age well. As with our other varieties, we strive to pick the fruit at the apex of ripening: when acid, sugar and flavor converge. When the fruit is picked at this most optimal opportunity, one can taste the raspberries and lavender of our piece of the Dundee Hills, the marionberries of the Eola Hills, the clay in the soil, a windy site, or simply the clarity of fruit developed by a long diurnal cycle. At Westrey, Pinot Noir is carefully destemmed before fermenting in small batches, watched over carefully by winemakers Amy and David as fruit turns into wine. Barrels are selected for their ability to lift and enhance fruit, rather than overwhelming it. Westrey’s signature is grace and balance, as we endeavor to craft ethereal wines built on the strong shoulders of pure fruit.
